Marinated Chicken and Corn Salad with Passionfruit Dressing

Marinated Chicken
- 4chicken fillets︎
- 30mllemon juice
- 15mlolive oil
- 5mllemon zest
- 1garlic clove(crushed)
- 5mlchopped dill(chopped)
DRESSING
- 30mllemon juice
- Zest of 1 lime
- 30mlolive oil
- 10mlDijon mustard
- 45mlFirst Choice Passionfruit Dessert Topping
- 1garlic clove(crushed)
- Salt and black pepper
Main Prep
To marinate the chicken: Combine the lemon juice, olive oil, zest, garlic and dill and marinate the chicken for at least 30 minutes.
Combine all the dressing ingredients and mix very well. Keep aside
Heat a griddle pan and grill the drained chicken for about 3 minutes on each side until golden brown and cooked
Season with salt and cover till needed.
Toss together all the salad ingredients, add some dressing and spoon onto serving plates
Top with the chicken and serve
